This cookbook and travel book was written by the Danish team behind Noma, published in conjunction with the pop-up restaurant's establishment in Japan in 2023. The book documents a multi-year exploration of Japanese food culture, craftsmanship and local roots – with Kyoto as both a geographical and cultural center.
The relationship between Noma and Japan began in 2009, when René Redzepi visited Kyoto at the invitation of star chef Murata-san. In the years that followed, collaborations have developed with Japanese growers, ceramists, chefs and producers. The temporary restaurant in Tokyo in 2015 became a milestone and laid the foundation for the extensive pop-up project that is now documented in book form.
For three years, Noma's team prepared for the establishment in Kyoto. The book intersperses the restaurant's menu development with visual insights from local excursions to miso factories, ramen places, vineyards, temples and contemporary art scenes. Photographs and reflections provide insight into the importance of the location for the team's process and for Noma's continued development.
