Classic French Recipes Cookbook

This cookbook is based on recipes by Ginette Mathiot. Mathiot was the author of Je sais cuisiner, France's best-selling cookbook for over 90 years, and taught several generations to cook at home. This volume presents over 170 selected recipes from her collected works - from classics such as onion soup gratin and potatoes dauphinois to regional dishes such as boeuf bourguignon from Burgundy and ratatouille from Provence. There are also traditional favorites such as vol-au-vent, eggs in meurette sauce, vichy carrots, oysters gratin, crème brûlée, pears in wine and tarte tatin.

The book is designed with a traditional linen cover and two labels, and contains newly taken photographs as well as a foreword by David Lebovitz and an introduction by Keda Black.

It is part of a collection of classic cookbooks from Phaidon and serves as a clear introduction to authentic French cooking with a focus on the home as a starting point.
