Vietnam - The Cookbook

Vietnam – The Cookbook is a cookbook from the international publisher Phaidon. The book collects 445 traditional recipes from Vietnamese home kitchens and explores the country’s culinary diversity through authentic techniques, regional variations and local ingredients.

Author Anaïs Ca Dao van Manen has traveled throughout Vietnam – from the street markets of Hanoi to the highlands of Hà Giang – to learn from home cooks and document dishes in their original context. The result is a rich and comprehensive presentation of Vietnamese cuisine, where each dish bears traces of place, tradition and personal craftsmanship.

The recipes are divided by cooking method and include everything from appetizers, snacks and salads to barbecue, noodle dishes, rice, soups, desserts as well as pickles, sauces and pantry ingredients. Classics like summer rolls and bún thịt nướng are interspersed with lesser-known dishes like Savoy rolls with mung beans and palm sugar cake with honeycomb structure.

The book is richly illustrated with photographs taken on location and captures both environments and meals.

Vietnam – The Cookbook is part of New Mag's Asian cookbooks and is suitable for anyone who wants to explore Vietnamese cooking in depth.
