Mangal II Cookbook

This cookbook is based on the recipes and stories behind the Mangal II restaurant in London.

The book presents over 60 dishes by chef Sertaç Dirik, who, together with his brother, has developed the family restaurant into a contemporary interpretation of Anatolian cuisine. Through personal texts, recipes and photography, it depicts how the brothers manage the legacy of their father Ali Dirik, who opened the UK's first ocakbasi restaurant in 1994.

Signature dishes such as Cull Yaw köfte with grilled apple sauce, grilled chickpea hummus, sourdough spide, mushroom manti and tahini tarte are found here - recipes that combine regional influences with a modern expression. A foreword by Action Bronson places the restaurant in a wider cultural context.

It is part of a series of cookbooks on contemporary cuisine from Phaidon and shows how Turkish food tradition can be reinterpreted in a global metropolis.
